FOR YOUR INFORMATION
Forest fruits belong to food groups VI and VII because they are particularly rich in vitamin C (although there are modest concentrations of carotenoids and some B vitamins).
They are also rich in fiber, water, mineral salts, phenolics and fructose.
The term “forest fruits” identifies a range of fruits that are in common NOT so much because of their botanical classification, but rather because of their common presence in the same natural habitat or growing environment.
In simple terms, they are berries, foods of plant origin found in the undergrowth or, more generally, in patches of wild vegetation (despite being the subject of agricultural crops).
Berries are used for: fresh consumption (recommended to maintain the vitamin and antioxidant content).
In addition to yogurt, mousse, bavarois, ice cream and other desserts. Flavoring liqueurs, extracting fruit juices, adding to leavened desserts (such as panettone cake), seasoning dishes such as stewed game, etc.
Balsamico and Forest Fruit Dressing is available for both individuals and companies.
