All our Deli selections is produced organically by small local companies in southern Tuscany.
The entire process of production follows the nature.

The cultivation was done without any chemicals, also avoiding the use
of hormones aimed at accelerating the growth and fertility of the plant

The set of rules for biological agriculture in Italy are very strict and severe.
Before being labelled as Organic, a product undergoes a series of exams from the tilling of the soil until the wrapping-up of the bottles.
A firm must work according to these rules for at least four years before obtaining such a recognition.
Here is the symbol for biological products in the EU:
This symbol instead means that the product comes from Italian biological cultivations. Biologisch gecertificeerd-Organic certified

What is the meaning of ICEA?

ICEA= Institute for Environmental and Ethical Certification.
The phrase Certificato Biologico must not be translated also when exported abroad. Such a logo is registered in Italy.
We have also another category of foodstuffs defined as Natural.

What does that mean? They are cultivated and produced according to the strict biological rules as above, but they do not have the certification.
Without such a certification, the only way to detect them is to carefully read the label. Their ingredients must not contain E-nr.

WHAT IS THE ‘SIGILLO DI GARANZIA’?

The “Sigillo di Garanzia” literally means “the warranty seal” is a seal that is applied to packaging to guarantee the integrity of the product and its contents.
This seal guarantees that the packaging has not been opened after filling and closure.
The style can be made at the request of the company, but must meet specific criteria, depending on the country of origin may be different.

    Wildflower honey

    It is used as a sweetener in milk, tea or herbal teas, and is also a valid substitute for the sugar used in baked goods.

    Organic Acacia Honey with Truffle

    Acacia Honey with Organic Truffle contains only grated black summer truffle. It does not contain synthetic flavors.
    This honey is always very light in color, it never crystallizes, so it always has a liquid and syrupy consistency. 

    Organic acacia honey with truffles is used in combination with fresh cheeses (ricotta and fresh goat cheese)
    or with aged cheeses such as Pecorino and sweet Gorgonzola. As an aperitif with a nice fresh white wine.

    ORGANIC SAFFRON STIGMAS

    ORGANIC SAFFRON STIGMAS  is a spice derived from the flower of Crocus sativus, commonly known as the “Saffron Crocus”. The stigmas, called threads, are collected and dried to be used mainly as condiments and dyes in food. It is completely collected and handcrafted.

    This product is suitable for vegetarians and vegans.

    How can it be used : Saffron stigmas in contrast to the powder requires more processing time, but it is better. To use the stamps must be soaked in water for about 30 minutes. In a small bowl lay the amount pistils you need [max.4 pistils per person], put the water there and finish with and lid or a plate; This is necessary to preserve the aroma and important substances. 1 or 2 saffron stigmas can also be used in herbal teas or citrus infusions

    TIP: Many recipes with Saffron can be found over the internet, the most famous Italian recipe: “Risotto allo Zafferano” [Rice with Saffron].
