ORGANIC SAFFRON STIGMAS Jar is a spice derived from the flower of Crocus sativus, commonly known as the “Saffron Crocus”. The vivid crimson stigma and styles, called
threads, are collected and dried for use mainly as a seasoning and coloring agent in food.
It is completely handmade.

This product is suitable for vegetarians and vegans.

How to use: Saffron pistils require longer processing time than powder but are tastier. Before use, the pistils should be soaked in warm water for about 30 minutes. In a small bowl put the quantity of pestles you need [max 4 pestles per person], add the lukewarm water and close with a lid or a plate; this is necessary in order to preserve the aroma and the important substances.

TIP: Many recipes with Saffron can be found on the internet, the most famous Italian recipe is: “Risotto allo Zafferano” [Rice with Saffron].

ORGANIC SAFFRON STIGMAS Jar  is a spice derived from the flower of Crocus sativus, commonly known as the “Saffron Crocus”. The stigmas, called threads, are collected and dried to be used mainly as condiments and dyes in food. It is completely collected and handcrafted.

Since the Middle Ages, Saffron has been widely cultivated in Tuscany.
In the past it was mainly used as a natural dye to color fabrics, then it was reintroduced as a culinary plantation. Saffron is a really demanding crop, both for its planting and for its processing.

This product was produced according to the protocol for organic farming and processed with environmentally friendly process.

THE PIERINI & BRUGI Organic Farm owes its history to the two families that for four generations dedicated with patience, care and passion to cultivating the land. It is made of two farms, “Podere Poggio Lombardo” in Scansano and “Podere Belvedere” in Campagnatico, for a total extent of about 100 hectares.
Both are on the top of two hills at 300-500 meters above sea level, in two of the most wild and evocative places of the Tuscan Maremma.
The climate is the Mediterranean one, with long warm and dry summers and mild winters.
While the hilly lands benefit constant ventilation and considerable thermal fluctuation, and with their South South- East exposition, they represent an ideal trait to obtain quality products.

All organic products of the Farm are obtained in compliance with CE 834/07 regulation and are certified by QCertificazioni S.r.L. authorized with D.M. Mi.P.A.A.F. n. 26740 of 04/12/2009.

INFORMATION ABOUT SAFFRON 

The word Saffron stems from the Arabic which means yellow.
This spice has a pleasant aroma reminiscent of honey with slightly bitter heavenly taste.
It is the king of herbs and spices and one of the oldest in the world.
Its use is dated back to 3000 years ago.
The spice saffron is beneficial include an antioxidant, antidepressant and aphrodisiac.

The stigmas are hand picked and very careful because they are very delicate and deliver the best quality.
In Europe, saffron widely used in Spain, where it is an essential ingredient in the Paella.
Saffron is used in Italy in the preparation of Risotto and in Belgium in the preparation of Rice Pudding
.

To obtain 1 kg of saffron 120,000 flowers are needed, this is the reason why the costs are very high.
You have to think that the minimum price of 1 kg of saffron is around 12,000 euros. The price varies by season, depending on the quantity and quality.
Finally, if you find Saffron in the trade with a low price it means that its origin is not clear (probably uncontrolled production).
It can also be added in small amounts in powder form to other herbs that give the same color effects.
