This Organic Balsamic Vinegar IGP from Modena label Ivory of young aging has a fresh sweet and sour scent.

What are GMO ingredients?

GMO-free means that there is less than 0.9% (the EU rule) of genetically modified material in a product. If the % is higher, this must be stated on the label.
If you want to be sure that there are no GMOs in your purchased product, then the official ‘EU organic’ logo is the only guarantee.

WHAT IS THE DIFFERENCE BETWEEN ACETO BALSAMICO D.O.P. AND I.G.P.?

There is one essential difference: Traditional Balsamic Vinegar from Modena D.O.P. obtained,
while Balsamic Vinegar is produced from Modena I.G.P.
Another difference concerns the ingredients: the DOP product is obtained from 100% boiled grape must harvested in the Modena region, while the IGP product is produced as a mixture of boiled grape must and wine vinegar.
These are two very different processes, but equally subject to controls and consumer protections.

WHAT IS THE DIFFERENCE BETWEEN ORGANIC AND NON-ORGANIC PRODUCT?

The difference is in the type of raw material used, not in the production process.
Organic Balsamic Vinegar from Modena is produced with raw materials from certified organic farming.
This means using natural growing methods and eliminating the use of pesticides and fertilizers that are potentially dangerous to humans.
Organic farming exploits the natural fertility of the soil by assisting it with limited interventions, promotes the biodiversity of the environment and rejects the use of genetically modified organisms.

In addition, HOW OLD IS THE PRODUCT?

The production regulations of Balsamic Vinegar from Modena I.G.P. strictly prohibits the use of any numerical form to define the various products. This means that it is not allowed to state the age of the I.G.P product on the label.
As for the traditional balsamic vinegar of Modena D.O.P., it is allowed to use the names Affinato or Extra Vecchio as a guaranteed minimum age, but never an exact age stated on the label.

I.G.P.= Indicazione Geografica Protetta stand for a certain method of processing. In English, Protected Designation of Origin (PDO). It ensures that only products genuinely originating in that region are allowed to be identified as such in commerce. The legislation first came into force in 1992. 

I.G.P. quality mark: To I.G.P. In order to make products, at least one stage of the production process must take place in a certain area.
Those who use I.G.P. production must comply with the strict production rules laid down in the production protocol, and compliance with these rules is guaranteed by a specific control body.
