In 2008 we built a new cellar, not only to make wine, but also to realize other products.
We have opted for a healthy and fair agriculture, far from the
large-scale production and large use of substances harmful to human health.
We believe in the products that the country proposes to us, and we do not charge extra.
In this way we distance ourselves from those who do not respect the land but exploit it.
By working this way, our production is an investment not only in something tasty, but also in our health.

The Sangiovese grape is base of our red and rosé wines.  It is used alone or in combination with other grapes to bring to life a blend that can be combined with traditional Maremma dishes to more modern dishes, but with strong flavors.

What distinguishes us from other productions in our area is organic cultivation and the processing method with which we can reduce the use of sulfites.
This method is called Sur-lie. It is an old method from France. Lie means dregs and the term indicates that the wine has matured on yeast.

After the alcoholic fermentation, the wine that has been fermented is not filtered or pumped and continues to ripen for a few months on the “lie”. The dregs, which lie on the bottom of the barrel or the stainless-steel tank.
In this dreg there are still residues of yeast and other solids, which, due to lack of oxygen, will ferment automatically. This results in a fuller and complex taste of the wine.
