Description
Organic Red Pesto, a traditional recipe originating from Southern Italy, is based on dried tomatoes soaked in water and combined with the ingredients of traditional pesto: basil, garlic, pine nuts and extra virgin olive oil. Ideal condiment for all types of pasta, also excellent for making delicious snacks, for example on toast, to give an extra touch to soups and as a side dish to red and white meat dishes.

Tomatoes are an agri-food product obtained by drying tomatoes.
Especially with tomatoes of varieties with low water content and firm skin, such as San Marzano.
According to the traditional method, the preparation is done with whole and ripe tomatoes, carefully cleaned, cut in half lengthwise.
After being sprinkled with salt and/or chili powder, they are dried in the sun on a wooden frame.
To facilitate the process and prevent humidity from affecting it, they are collected indoors at night.
Drying usually lasts about a week, after which the tomatoes, completely dehydrated, are rinsed and blanched in a solution of water and vinegar to sterilize them.
Alternatively, the process can also be done with an electric dryer or a solar device.
In addition to being certified organic, this sauce is also Gluten Free.

To preserve: After opening the product, store in the refrigerator for a maximum of 5 days between 0° and 4°C.
