GENERAL INFORMATION

The Lemon (Citrus Limon) is a species of small evergreen trees in the flowering plant family Rutaceae, native to Asia, primarily Northeast India (Assam), Northern Myanmar or China.

The fruits have a sour taste caused by the citric acid found in many other citrus fruits.

Lemon contains a lot of vitamin C. It is used in small quantities in many dishes as a condiment, but also in baked goods such as cakes.
In addition to the pulp and juice, you can also use grated or candied lemon zest.
In large-scale distribution, after harvesting, the lemon peel receives a thin layer of wax which makes it shine.
Organic lemons are not subjected to this waxy coating.

The essential oil can be obtained from the lemon peel by pressing or steam distillation, which is widely used in perfumes (including cologne), and in other cosmetics.
In food consumption it is used in many drinks and sweets.
